The answer is very simple,"M" is the symbol for metric thread standard.
"8" indicates the nominal diameter (major diameter) of a 8mm tap. "1.25" indicates the pitch is 1.25 mm.
"X" is only a "symbol" to separate the nominal diameter from the pitch so there's no particular meaning.
